What is Suran ki Sabzi?
Suran also known as Elephant Yam is a popular root vegetable. Suran is a versatile vegetable that can be used to prepare gravy dishes, baked or fried chips as well. I have prepared Suran Tikkis which turned out to be super yummy and has been a regular snack at home. You can check and try my recipe for Suran Tikki. Not just tikkis, I have also prepared Suran | Yam Chips as well. Yam chips are a healthy snack and a perfect and best substitute for potato chips. Suran ki Sabzi | Suran Masala is a delicious dish which calls for a very few basic ingredients available at home. You can use boiled suran or just cook it along with the masalas. I prefer to cook it with the masalas as it wonderfully absorbs all the delicious flavours. Suran sabzi is a perfect substitute for non – veg and so I do add some chicken masala to this which enhances the taste of this dish, one can also choose to add pav bhaji masala or any garam masala. Ofcourse, you need to be a little careful while peeling the yam, I prefer wearing gloves however, one can choose to apply some oil to the palms before handling suran. Suran ki Sabzi | Suran Masala Recipe
- 1 kg suran (2 cups chopped in cubes)
- 2 tbsp oil
- 1 tbsp ginger garlic paste
- 1 1/2 tsp red chilli powder
- 1/2 tsp haldi/turmeric
- 1 tsp chicken masala or pav bhaji masala
- Water for cooking
- Salt as desired
- Coriander for garnishing
- Peel and chop suran in small cubes. Thoroughly wash and soak them in water or salt water for around fifteen to twenty minutes.
- In a pan, heat oil.
- Add ginger garlic paste, red chilli powder, turmeric and chicken masala and fry for around a minute or so. Add some water if the masala gets too dry.
- Once the oil separates, add the suran pieces and mix well till the masala is completely coated.
- Add salt and water. Cover and cook till it gets nice and soft. This would take around fifteen minutes. Stir occasionally.
- Once it gets a little dry and mushy, cut and check. If cuts easily, suran is cooked.
- Add coriander and mix.
- Suran ki Sabzi | Suran Masala is ready. Serve hot and enjoy with roti or parathas.
- One can choose to pressure cook yam for one whistle or till done.
- You can also used boiled suran.
- I have used and prefer to add some chicken masala which enhances the taste of this dish, you could also use pav bhaji masala or any garam masala.
