How to make Almond Cookies?

We all love cookies be it choco chip cookies, oats cookies or just simple butter cookies. My personal choice is Almond Cookies and these are the first cookies I ever baked.

I made a small batch initially and they turned out to be so yumm and melt in the mouth and it all got over in a giffy that I instantly decided to bake another batch to stock a few. My joy and excitement just wouldn’t let me take my eyes off these beauties as they baked and the aroma of these cookies was just irresistible.

With a very few basic ingredients, you too can bake and enjoy these Almond Cookies over a cup of tea or coffee.

Ingredients:

  • 1 cup butter at room temperature
  • 3/4 cup sugar
  • 1 1/2 cup maida/all purpose flour
  • 1/2 tsp baking powder
  • 2 drops of vanilla essence or pinch of vanilla powder
  • 2 tbsp custard powder (optional)
  • 2 tbsp milk
  • 1/2 cup chopped roasted almonds
  • 8 – 10 Almonds cut in two halves

Method:

  • Coat chopped almonds with some dry maida and keep it aside.
  • In a mixing bowl, mix together butter and sugar till well combined and fluffy.
  • Add essence, custard powder, maida, almonds and baking powder and mix well.
  • Add milk half at a time and make a nice dough. Do not knead it much, just collect everything together. Feel free to add little more milk around a tbsp more just to bring the dough together.
  • Take small portions of dough, roll it and flatten it between palms and place on a baking tray. Squeeze in half an almond in the centre.
  • Bake these cookies 180 degrees in a pre heated oven for 10 – 12 minutes. My oven took ten minutes, you may check as per your oven.
  • Almond Cookies are ready. Enjoy with your cup of tea or coffee.

    Looks good. You cup is 200 ML or 250 ML?

    The cup I used shows 16 tbsp, 140 ml. You can use any cup size for this recipe but it needs to be standard or same cup to measure all ingredients
